One of my favorite dishes to make/eat!
Name: Coconut Chicken and Rice

1–2 red bell peppers
1 lb. chicken (cut in chunks)
1 can coconut
1 tbs red curry paste or chili paste (adjust to desired temperature)
1 12 oz. bag frozen corn kernels
1.5 tbs brown sugar
1 tbs lemon juice (I usually omit)
1 tbs fish sauce (I usually omit)
3 cups rice
On high heat melt 2 tbs solid coconut (this is usually the thicker stuff at the top of the can) w/peppers, add 2/3 cup water, cook till peppers are limp
Add coconut milk, paste and corn, stir till boil
Add chicken and sugar. Continue on med. heat cook for 3 mins. till chicken is done.
Serve over rice!
